  1. Preheat oven to 400°F (200°C).
  2. In a bowl, whisk together the egg yolk, sriracha, and ½ tsp salt. Add the chicken wings and toss to coat.
  3. In a separate bowl, combine panko, chili powder (if using), a dash of salt, and olive oil. Mix together.
  4. Dip each wing into the breadcrumb mixture, coating both sides. Arrange in a single layer on a nonstick oven-safe pan.
  5. Sprinkle any remaining breadcrumb mixture over the tops of the wings.
  6. Bake at 400°F for 30 minutes until golden brown and cooked through. The nonstick pan ensures the bottom crisps up nicely.
  7. Serve immediately.

My Notes

Simple, elegant, and very fast to prepare. The sriracha-egg yolk wash is the key — it adds heat and helps the panko adhere without deep frying.
