Ingredients
- 1 lb chicken wings, about 12-14 pieces (centre/flat pieces preferred)
- 1 egg yolk
- 1 tbsp sriracha
- ½ tsp salt, divided
- ½ cup panko breadcrumbs
- ½ tsp chili powder (optional)
- 2 tbsp olive oil
Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, whisk together the egg yolk, sriracha, and ½ tsp salt. Add the chicken wings and toss to coat.
- In a separate bowl, combine panko, chili powder (if using), a dash of salt, and olive oil. Mix together.
- Dip each wing into the breadcrumb mixture, coating both sides. Arrange in a single layer on a nonstick oven-safe pan.
- Sprinkle any remaining breadcrumb mixture over the tops of the wings.
- Bake at 400°F for 30 minutes until golden brown and cooked through. The nonstick pan ensures the bottom crisps up nicely.
- Serve immediately.
My Notes
Simple, elegant, and very fast to prepare. The sriracha-egg yolk wash is the key — it adds heat and helps the panko adhere without deep frying.
